One of my favorite pies is Razzleberry. I love the sweet and sour contrast in the flavor! I'd only ever bought the pre-made version, but in an attempt to become less reliant on the grocery store and know more about what's in my food, I decided to make my own Razzleberry pie filling!
Ingredients:
4 cups mixed berries (raspberry, blackberry, blueberry), fresh or frozen
2 tbsp lemon juice
1 cup sugar
1/2 tsp salt
3 tbsp corn starch
Instructions:
1. Add all ingredients to a medium pot with a splash of water (about 1 tablespoon) and stir. Cover and cook on medium-high heat, stirring occasionally, for about 10 minutes. You want the mixture to be a mostly liquid consistency, with the fruit softened and warmed through completely.
2. Remove from heat and let cool slightly for about 8-10 minutes.
3. Add to your prepared pie crust and bake for 15 minutes at 350° uncovered. Cover with aluminum foil, and cook for an additional 40-45 minutes, until the crust is golden brown. OR incorporate the filling in other fun recipes like hand pies!
